Since immemorial times and used for multiple applications on different industries, olive oil accompanies us in our daily lives. Our ultimate symbol of Mediterranean identity—not to mention the vine and fig tree—various civilizations have maintained olive oil as one of the basic pillars and representatives of diverse cultures.

 Despite recognizing related olive cultivation in the Upper Paleolithic era (12,000 BC), it was not until the Roman Empire (from the first century AC) when the south of the Iberian Peninsula marks a significant distinction in terms of development about Oleic culture, compared to other areas of prevalence of Olives. 

Since then, with the passage of centuries, the inherited traditions of our ancient cultures have endured over time incorporating new techniques and productive knowledge to the olive sector. Thus, the Iberian Peninsula is considered the World Leader in Olive Oil production.
